Ingredients

  • 250 g urad dal flour
  • 10 g salt
  • 1 tsp ground white pepper (optional)
  • 0.5 tsp Indian spice mix
  • 125 ml water
  • oil for frying

Instructions

    Mix spices with the flour and lightly sauté in a pan without fat.

    Heat water with salt, let it cool slightly, then pour in a thin stream while stirring into the lentil flour mixture until a very firm dough forms.

    Transfer dough to a food processor with blade attachment and pulse finely. Then portion dough into a mortar and pound until it has a rubbery consistency.

    Roll small flatbreads from dough portions and dry them; store airtight.
