Mixed Grilled Vegetables

Ingredients

  • 2 Zucchini
  • 1 eggplant
  • Salt
  • 2 red bell peppers
  • 2 red onions
  • 2 Garlic cloves
  • 3 tbsp coarse mustard
  • 2 tbsp Soy sauce
  • 2 tbsp sunflower oil
  • 300 g grilled cheese (sliced)
  • Pepper

Instructions

    Wash the zucchinis, cut them lengthwise into strips. Slice the eggplants and lightly salt them. Wash the bell peppers, deseed them and cut into strips. Peel the onions and cut into wedges. Peel the garlic cloves and slice thinly. Mix the mustard with soy sauce and sunflower oil and toss with the vegetables. Add the grilled cheese and grill everything in an aluminum grill pan over high heat, turning occasionally for about 7-10 minutes.
