Tomato-Pepper Gratin with Fried Egg

Ingredients

  • 8 tomatoes
  • 2 red bell peppers
  • 4 pepper slices
  • 2 slices crusty white bread
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • Cayenne pepper
  • 1 tbsp fresh chopped rosemary
  • 40 g grated Parmesan
  • 100 ml dry white wine
  • 4 eggs

Instructions

    Preheat the oven to 180°C (350°F) with both top and bottom heating.

    Wash the tomatoes, cut off the stem ends. Wash, clean, and slice the red bell peppers into strips; also slice the pepper slices. Cut the crusty white bread into strips.

    Fill a greased baking dish with the prepared ingredients and drizzle the remaining olive oil over them. Season with salt, pepper, cayenne pepper, then sprinkle rosemary and parmesan on top. Pour in the dry white wine.

    Bake in the oven for about 25 minutes. Remove briefly, place cracked eggs on top, and bake for another ~10 minutes until set.
