Carrot Apple Soup

Ingredients
- 2 onions
- 1 Garlic clove
- 500 g carrots
- 1 apple
- 2 tsp freshly grated ginger
- 4 tbsp butter
- 2 tbsp flour
- 1 tbsp curry powder
- 800 ml vegetable broth
- 150 g whipping cream
- 1 egg yolk
- Salt
- 1 tbsp chives
- Lemon balm
Instructions

Peel and dice onions and garlic.

Peel carrots and grate finely. Quarter the apple, remove seeds, and grate as well.

Heat butter in a pot and sauté onions and garlic until translucent; add carrots, apple, and ginger and cook briefly.

Sprinkle flour and curry powder over the mixture and toast for a short time. Add broth, stir, cover, and simmer for about 10-15 minutes.

Whisk cream with egg yolk. Stir remaining cream into the soup.

Remove from heat and fold in the whisked egg mixture. Season with salt. Do not boil further.

Serve the soup on plates, sprinkle with chives, and garnish with lemon balm.
