Sardines with Egg and Herb Marinade

Ingredients
- 24 fresh sardines (ready to cook without head and bones)
- 1 radicchio
- flour (for dusting)
- 8 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 3 tomatoes
- 2 Eggs
- 3 tbsp balsamic vinegar
- a pinch of sugar
- 2 tbsp freshly chopped basil
Instructions

Rinse the sardines thoroughly under running cold water and pat dry. Remove the stem from the radicchio and slice the head into 1 cm thick slices. Coat the sardines in flour and fry them in 2 tbsp hot oil for about 3 minutes on each side until golden brown. Season with salt and pepper, remove from the pan and drain on kitchen paper.

Briefly blanch the tomatoes, shock them, peel, quarter, deseed and dice finely. Hard boil the eggs, cool, peel, chop and mix with balsamic vinegar and the remaining olive oil. Add the tomatoes and season with salt, sugar and pepper.

Arrange the radicchio on plates, top with sardines, drizzle with the tomato-egg vinaigrette, sprinkle basil and serve warm or cold.
