Fried Sardines

Ingredients
- 2 limes
- 1 handful coriander leaves
- 12 sardines (pre‑cooked)
- 80 g corn flour
- 1 pinch ground cumin
- 1 egg
- Salt
- freshly ground pepper
- 3 tbsp vegetable oil (for frying)
Instructions

Squeeze one lime and cut the other into wedges.

Wash and dry the coriander. Pat the sardines dry, then drizzle both inside and outside with lime juice.

Mix corn flour with ground cumin on a small flat plate. Beat the egg with a pinch of salt and pepper on another plate.

Coat each sardine first in the seasoned flour, tap off excess, then dip in the beaten egg.

Heat oil in a large skillet and fry the sardines until golden‑brown on both sides.

Drain on paper towels to remove excess oil.

Serve the fried sardines on a platter with lime wedges and coriander, accompanied by vegetables if desired.
