Sardinen en papillote

- 12 sardines (ready to cook, headless)
- Salt
- pepper (ground)
- 1 lemon (juice)
- 8 large tomatoes
- 2 onions
- 5 garlic cloves
- 4 tbsp olive oil

Preheat the grill or set the oven to grill mode.

Rinse the sardines thoroughly and season both outside and inside with salt and pepper. Drizzle about 2 tbsp lemon juice over them.

Wash the tomatoes, cut off the stem ends, and slice into ~1 cm thick rounds.

Peel the onion and garlic. Slice the onion thinly; chop the garlic into large pieces.

Cut four squares of parchment paper (~30x30 cm). Place tomato slices, onion rings, and garlic on each square. Season with salt and pepper. Add three sardines to each packet and drizzle with olive oil. Seal tightly (e.g., with a toothpick) and grill for about 10 minutes.

Carefully open the packets and serve with whole grain baguette.
