Ingredients
- 600 g fresh sardines (ready to cook, peeled)
- Salt
- Pepper
- 300 g tomatoes
- 2 Garlic cloves
- 2 tsp chopped thyme
- 6 tbsp Olive oil
- 1 bay leaf (preferably fresh)
- 2 tsp fennel seeds
- 2 tbsp white wine vinegar

Wash the sardines and cut off their heads, rinse, pat dry and season with salt and pepper.

Briefly blanch the tomatoes for a few seconds, shock them in cold water, peel, quarter, deseed and dice into small cubes. Peel the garlic and finely slice it.

Heat 3 tbsp oil over medium heat and fry the sardines for about 2 minutes per side, then set aside on a plate. In the same pan add the remaining oil, sauté bay leaf and fennel seeds, briefly cook thyme and garlic, stir in tomatoes and simmer for 2–3 minutes. Season with vinegar, salt and pepper. Add the tomato mixture to the sardines and serve.
