Grilled Sardines with Aioli

- 6 Garlic cloves
- 2 egg yolks
- Salt
- pepper (ground)
- 200 ml olive oil
- 1 tsp lemon juice
- 16 sardines (ready-to-cook about 50 g each)
- 4 tbsp olive oil
- 1 bunch thyme
- 4 tbsp Lemon juice
- Salt
- pepper (ground)
- oil (for the grill rack)

Peel the garlic and press it into a bowl with a garlic press. Whisk in egg yolks, salt, and pepper thoroughly. Then drizzle the olive oil in drops, followed by a thin stream while whisking. When the sauce is thick‑creamy, stir in lemon juice, taste, and cover to chill until serving.

Wash, clean, and pat dry the sardines; place one thyme sprig inside each belly cavity, chop remaining thyme leaves and mix with olive oil. Season the sardines with salt and pepper and brush them with thyme oil. Oil the grill rack. Grill the sardines on the oiled rack over medium heat for about 2–3 minutes per side. Arrange on a platter and serve with aioli.
