Fried Marinated Sardines

Ingredients

  • juice of one lemon
  • 2 grated garlic cloves
  • Salt
  • Pepper (freshly ground)
  • 10 tbsp olive oil
  • 16 ready‑to‑eat sardines
  • 4 tbsp flour
  • 2 tbsp balsamic vinegar
  • 250 ml dry white wine
  • 2 tbsp chopped parsley
  • 2 onions
  • 1 untreated lemon

Instructions

    Whisk together lemon juice, garlic, salt and pepper with 5 tbsp oil; brush the sardines and marinate for several hours. Pat the sardines dry, coat in flour, and fry in the remaining oil until golden brown.

    Peel and finely dice the onions. Add the pan drippings to vinegar, the remaining marinade, onions, and wine; bring to a boil and pour over the sardines. Marinate in the refrigerator for several hours, then serve garnished with lemon and parsley.
