Sardine Rolls with Herb Filling

Ingredients
- 12 sardine fillets (ready to cook)
- 1 Shallot
- 1 Garlic clove
- 1 red chili pepper
- 2 handfuls mixed herbs (parsley and coriander)
- 3 tbsp olive oil
- 0.5 tsp organic lemon zest
- Salt
- Pepper (freshly ground)
- 1 tbsp Lemon Juice

Preheat the oven to 180°C (356°F) with upper and lower heat.

Rinse the sardines and pat dry. Lay them on a work surface skin side down. Peel and finely dice the shallot and garlic. Wash, halve, deseed, and dice the chili pepper. Rinse the herbs, pat dry, strip leaves, and roughly chop. Sauté the shallot, garlic, and chili in 1 tbsp hot oil until translucent. Remove from heat, add the herbs and lemon zest, season with salt and pepper. Spread the mixture over the sardines, roll them up, and secure with toothpicks. Place in a greased baking dish, season again with salt and pepper, and bake for about 8 minutes.

Before serving drizzle with lemon juice and a little olive oil.
