Rolled Sardines

Ingredients
- 12 sardine fillets (ready to cook)
- 1 Garlic clove
- 1 handful mixed herbs (parsley and dill)
- chili flakes
- 4 tbsp olive oil
- 0.5 tsp lemon zest (unprocessed)
- Salt
- 1 tbsp Lemon Juice

Preheat the oven to 160°C (320°F) with upper and lower heat.

Rinse the sardines and pat dry. Lay them on a work surface skin side down. Peel and finely dice the garlic. Rinse, pat dry, pluck, and roughly chop the herbs. Mix the garlic with some chili, 2-3 tbsp oil, the herbs, and lemon zest; season with salt. Spread the mixture over the sardines, roll them up, and secure with toothpicks. Place in a greased baking dish and bake (or grill turning) for about 10 minutes.

Before serving drizzle with lemon juice and a little olive oil. Sprinkle with sea salt and chili and serve.
