Marinated Sardines with Lemon

Ingredients
- 600 g sardine fillets (ready to cook)
- 1 Carrot
- 1 onion
- 1 sage leaf
- 1 tsp peppercorns
- 250 ml dry white wine
- 1 lemon (sliced)
- Sea salt
- 2 Garlic cloves
- 125 ml olive oil
- lemon wedges
Instructions

Peel and dice the carrot and onion.

Sauté carrot, onion, sage, peppercorns, 250 ml water, lemon slices and wine for about 10 minutes until lightly simmering; season with sea salt, remove from heat and let fish soak in the broth for about 1 minute, then remove and cool, placing in a shallow bowl.

Peel garlic and finely chop it.

Mix olive oil with garlic and pour over the sardines. They should be covered. Let them marinate for about 4 hours, turning occasionally. Serve with lemon wedges and grissini as desired.
