Ingredients

  • 2 egg yolks
  • 3 peppercorns
  • 1 tsp mustard seeds
  • 2 tbsp lemon juice
  • 200 ml olive oil
  • 3 Garlic cloves
  • 1 tbsp capers
  • Salt
  • pepper (ground)
  • 12 sardines
  • 1 untreated lemon
  • olive oil
  • Sea salt
  • 12 slices baguette (or ciabatta)

Instructions

    Place the egg yolks in a bowl. Crush the peppercorns and mustard seeds with a mortar, add them to the bowl. Whisk with a hand mixer until creamy, adding lemon juice as you go. Slowly drizzle in the olive oil while whisking continuously; once the first portion is incorporated, pour the remaining oil in a thin stream, stirring vigorously until a creamy mayonnaise forms. Peel the garlic cloves and blend 1–2 tbsp of oil with them in a blender, then spoonfully add to the mayo while continuing to stir. Fold in capers and season with salt and pepper.

    Wash the sardines, remove head, tail, and middle spine, and open the fish. Rinse a lemon over hot water and zest it. Mix 4–5 tbsp of olive oil with the zest and brush the fish with this mixture. Season with sea salt and grill both sides for 4–5 minutes.

    Grill the baguette slices on both sides until golden brown. Drizzle with olive oil. Place the grilled sardines on top and serve drizzled with the sauce.
