Ingredients

  • 2 sheets white gelatin
  • 2 egg yolks
  • 2 tbsp honey
  • 1 packet vanilla sugar
  • 100 ml sea buckthorn juice (unsweetened)
  • 500 g cream yogurt
  • juice of 1/2 lime
  • 2 tsp chopped pistachios

Instructions

    Soak gelatin in cold water.

    Whisk together egg yolks, honey, vanilla sugar and sea buckthorn juice. Fold in yogurt. Squeeze out excess liquid from gelatin and add to the mixture with lime juice.

    Stir under a thin stream into the sea buckthorn yogurt until smooth. Chill until the mixture is pourable.

    Fill a piping bag fitted with a star tip and pipe into glasses. Refrigerate until firm. Before serving, sprinkle pistachios over the yogurt and garnish the rim of each glass with a lime slice.
