Ingredients
- 150 g honey
- 150 g beetroot syrup
- 200 g butter
- 500 g rye flour (Type 1050)
- 1 untreated orange (zest grated)
- 4 tsp ground cloves
- 10 g potash (about 1 tsp)
- 3 tsp water
- powdered sugar (for dusting)

Warm honey, syrup and butter over low heat until the butter melts. Then let cool to room temperature. Mix flour with orange zest and ground cloves in a bowl. Stir the honey mixture into the flour. Dissolve potash in water and knead into the dough. Cover the dough and rest at room temperature for 24 hours.

Preheat oven to 180°C. Grease baking sheet with butter. Roll out dough on a floured surface to about 1/2 cm thickness and cut out stars and hearts as desired. Place hearts on baking sheet and bake in middle rack for about 12 minutes until golden yellow. Cool on a wire rack. Dust with powdered sugar before serving.
