Creamy Quark with Kiwi and Blueberry Sauce

- 250 g frozen blueberries
- 120 g sugar
- 6 kiwis
- 2 egg yolks
- 100 ml whipping cream
- 250 g quark (20%)

Bring the blueberries with 30 g of sugar to a simmer while stirring, puree, and strain through a fine sieve. Chill the blueberry sauce in the refrigerator.

Meanwhile peel the kiwis. Set aside 4 slices for garnish; dice the remaining kiwis and slowly bring them to a boil with 30 g of sugar. Puree the kiwis and chill as well.

Whisk the egg yolks with the remaining sugar until frothy. Whip the cream stiffly, then fold it into the quark along with the egg foam.

Fill glasses with the kiwi puree, gently spread the quark cream on top, and finally pour in the blueberry sauce. Garnish with kiwi slices.
