Salmon with Wine Sauce and Vegetables

- 700 g wild salmon fillet
- 0.5 lemon (juice)
- 1 bunch chives
- 100 ml White wine
- 200 g heavy cream
- 100 g crème fraîche
- Salt
- Pepper (freshly ground)

- 1 cucumber (peeled, seeded and diced small)
- 2 tsp germ oil
- 600 g Potatoes
- 2 tbsp butter

Instructions

Mix cucumber cubes with 2 pinches of salt for about 10 minutes, then strain in a sieve and drain.

Wash salmon, pat dry and cut into equal portions. Season with salt and pepper and drizzle with lemon juice. Heat cream and white wine in a pot and steam the salmon pieces over low heat with the lid on for 6 minutes.

Remove salmon from the pot and keep covered and warm. Add crème fraîche to the cooking liquid and reduce to a slightly thick sauce, seasoning with salt and pepper.

Halve potatoes as needed and quickly brown all sides in hot butter, seasoning with salt and pepper.

Wash chives, shake dry, cut into ribbons and stir half of them into the sauce.

Combine cucumber cubes with oil and lemon juice, season with salt and pepper, then fold in remaining chives.

Arrange salmon with sauce, potatoes and cucumber salad on plates.
