Ingredients

  • 1.2 kg whole salmon (head removed, ready to cook)
  • 1 untreated orange
  • 2 untreated lemons
  • 150 ml balsamic vinegar
  • 400 g instant couscous
  • 1 chili pepper
  • 2 Zucchini
  • 2 tbsp chopped watercress (coarsely chopped)
  • 2 tbsp olive oil
  • Sea salt
  • black pepper

Instructions

    Wash and pat the fish dry. Line a baking tray with aluminum foil and place the salmon on it. Make several shallow cuts about 3 cm deep in the flesh. Slice one orange and one lemon into wedges and fill the belly of the fish with them. Thinly slice the second lemon and insert slices into the cuts in the flesh. Drizzle vinegar over the fish and lightly salt. Wrap tightly with foil, sealing well. Bake in a preheated oven at 200°C (fan) for about 30 minutes. Open the foil and bake another 15 minutes until golden brown.

    Prepare couscous according to package instructions.

    Wash and dice zucchini. Wash chili pepper and finely chop. Sauté together in hot oil. Mix into the finished couscous, season with salt and pepper, then fold in watercress. Serve alongside the salmon.
