Salmon Tataki with Lentils

Ingredients

  • 250 g Puy lentils
  • 500 ml vegetable broth
  • 1 untreated lime
  • 200 g smoked salmon (sliced)
  • 1 passion fruit
  • 1 tbsp Olive Oil
  • Salt
  • ground pepper

Instructions

    Wash the lentils and drain. Bring the broth to a boil and simmer the lentils gently for about 20 minutes. Drain and let cool. Wash the lime hot, grate the zest and squeeze out the juice. Cut the salmon first into strips, then into cubes.

    Halve the passion fruit, scrape out the pulp and mix with the salmon, lentils, and 1/2 tsp lime zest. Season with olive oil, a splash of lime juice, salt, and pepper. Plate on bowls and serve with fresh baguette if desired.
