Salmon with Mango Sauce

Ingredients
- 1 Mango
- 1 red chili pepper
- 2 cloves garlic
- 20 g fresh ginger
- 80 ml apple vinegar
- 50 ml Apple Juice
- 2 tbsp whole cane sugar
- 80 g sultanas
- 1 tsp ground allspice
- 1 sprig mint
- Salt
- black pepper (freshly ground)
- 700 g salmon fillet (with skin)
- 2 tbsp olive oil

Peel the mango, remove the flesh from the pit and dice into small cubes. Wash the chili pepper, halve it, deseed and slice into strips. Peel the garlic and fresh ginger and finely chop both.

Bring the vinegar with 100 ml water, apple juice and whole cane sugar to a boil and simmer until the sugar dissolves. Then add all prepared ingredients together with sultanas and allspice to the liquid and let thicken over low heat for about 20 minutes, stirring occasionally.

Wash the mint, shake dry, pluck leaves and cut into strips. Fold into the chutney, season with salt and pepper, and allow to cool.

Rinse the salmon, pat dry and cut into four portions. Season with salt and pepper and sear in a hot non-stick pan over skin side for 3–4 minutes until golden brown. Flip, remove from heat and let rest 1–2 minutes until translucent. Serve with chutney.
