Salmon with Quinoa
A perfect after-work recipe – quick to make, healthy and made with fresh ingredients.
Ingredients
- 350 g quinoa
- 1 onion
- 3 Tbsp plant oil
- 1 l vegetable broth
- 300 g salmon fillet
- Salt
- 1 untreated lemon
- 80 g freshly grated Parmesan
- white pepper

Wash the quinoa under running water until clear. Peel and dice the onion. In a pot, sauté in 2 tbsp oil until translucent. Add the quinoa and deglaze with some broth. Drain the quinoa and add more broth. Stir occasionally, draining the grains and adding broth again. Continue for about 20 minutes until the quinoa is creamy.

Meanwhile, rinse the salmon, pat dry, season with salt and cook in a hot non-stick pan with the remaining oil, turning every 4-5 minutes until lightly golden brown on all sides. Wash the lemon, dry it and zest the peel. Squeeze some juice.

Add the parmesan except for 4 tbsp to the quinoa and season with lemon juice, salt and pepper. Serve in deep bowls, placing the salmon on top, and sprinkle with remaining parmesan and lemon zest.
