Salmon on Asian Vegetables and Rice

Ingredients
- 2 salmon fillets (150 g each)
- 1 tbsp ghee (clarified butter)
- 2 Pak Choi
- 300 g basmati rice
- 4 tbsp finely chopped coriander leaves
- 2 tbsp sesame oil
- 1 lime (1 tbsp grated zest)
- 2 limes (juice)
- Salt
- Pepper (freshly ground)

Cook the rice according to package instructions and keep warm. Cut the pak choi lengthwise in half; depending on leaf size, cut stems a few more times. Boil plenty of salted water, blanch pak choi for 3 minutes, then shock in ice water, pat dry with a towel, and drizzle with sesame oil. Mix coriander with oil, salt, pepper, lime zest, and lime juice well.

Heat ghee in a pan and sear the salmon over high heat on both sides until crisp. Reduce heat and spread the coriander mixture thickly on top of the salmon. Cover and cook at low heat for 10 minutes. Plate the salmon with pak choi and rice in bowls and serve immediately.
