Salmon Quesadillas

Ingredients
- 150 g corn flour
- 150 g wheat flour
- 1 pinch salt
- 250 ml Water
- 8 slices smoked salmon
- 2 oranges
- 1 tbsp Olive Oil
- pepper (ground)
- 4 slices of salmon (cut into strips)
- 1 spring onion (sliced thinly)
Instructions

Mix corn flour, wheat flour with salt and water and knead until a moist, soft dough forms; cover and rest for about 15 minutes.

Divide the prepared dough into 8 pieces and roll each into a circle with a rolling pin. Fry each side for about ½ to 1 minute without oil until dark brown spots appear, then set aside warm.

Peel oranges with a sharp knife, remove all white membranes and cut along the segments.

Season orange slices with pepper and drizzle with olive oil.

On each of 4 tortillas place salmon slices and orange slices, cover with remaining tortillas, cut into triangles, arrange salmon strips decoratively. Sprinkle spring onion rings on top.
