Salmon Patties

Ingredients
- 1 loaf roll (day-old)
- 1 Spring onion
- 2 Tomatoes
- 2 tbsp butter
- 500 g salmon fillet
- 1 egg
- 1 yolk
- 2 tbsp cornflour
- bread crumbs
- vegetable oil (for frying)
- Salt
- Pepper
- 1 tbsp chopped parsley

Prepare the dough ingredients for the patties: soak bread in cold water. Clean, wash and finely chop the spring onion. Blanch tomatoes briefly, cool, peel, quarter, seed and dice finely.

Sauté both together in butter and let cool. Finely chop the salmon fillet or pulse through a coarse grinder.

Combine the drained bread with the sautéed vegetables, egg, yolk, cornflour and salmon mixture. Mix by hand or with two forks into a dough, season with salt and pepper. With damp hands shape 12 patties and coat in bread crumbs.

Heat oil in a pan and fry the patties in batches, turning once until golden‑yellow on each side (about 3–5 minutes). Keep finished patties warm.
