Salmon with Mustard Fruits & Zucchini-Patato Vegetable

- 800 g small potatoes (young)
- 1 jar Italian mustard fruit (delicatessen), small
- 4 pieces salmon fillet (about 250 g each)
- 2 zucchini (yellow and green)
- marinade liquid of the mustard fruit
- 1 tbsp Lemon Juice
- 2 tbsp olive oil
- Salt
- Pepper
- fresh mint
- 1 Garlic clove

Wash the potatoes thoroughly, halve or quarter them and cook with skins in plenty of salted water for 25-30 minutes until tender.

Wash the zucchini and cut into sticks.

Drain the mustard fruits, catch the liquid and dice it finely.

Peel the garlic and finely chop it, mix into the fruit cubes.

1. Lightly oil a baking sheet, place the salmon fillets on it and spread the mustard fruit mixture over the fillets. Place a sprig of mint on each fillet and bake in a preheated oven at 160°C for about 10 minutes.

2. Remove the fish from the oven, season with salt and pepper, and cook for another 5-10 minutes until done.

3. Blanch the zucchini in plenty of salted water for 2 minutes.

4. Drain the potatoes, put them in a bowl. Add the zucchini and mix everything with lemon juice, mustard fruit marinade and olive oil.

Season with salt and pepper and serve together with the salmon fillets on plates.
