Salmon with Vegetables

Ingredients

  • 4 thick salmon fillets
  • 2 Eggs
  • 50 g Parmesan
  • 4 tbsp olive oil
  • 2 thick slices of cream cheese, 60 g each
  • ½ bunch basil
  • Salt
  • pepper (from grinder)
  • 4 tbsp flour
  • 40 g Butter
  • 1 Zucchini
  • 1 tomato

Instructions

    Beat the eggs, parmesan and 2 tbsp olive oil together.

    Cut the cheese slices in half diagonally. Wash the basil, pat dry and finely chop it.

    Make a pocket in each salmon fillet. Season inside and outside with salt and pepper, then fill with basil and cheese.

    Heat butter in a large pan. Place flour on a flat plate. Dredge the salmon first in flour, then in the egg mixture. Cook over low heat for about 5 minutes per side.

    Wash the zucchini and slice it. Quarter the tomato, remove seeds and dice. Sauté both together for about 4 minutes in remaining olive oil, season with salt and pepper, and serve alongside the salmon.
