Salmon Fillet in Marinade

Fresh salmon fillet marinated and served on a bed of arugula, finished with dill sprigs and lime slices for a bright, Spoonsparrow dish!
Ingredients
- 200 g fresh salmon fillet (skinless)
- 1 bundle arugula
- 2 tbsp Lime juice
- 1 tsp sharp mustard
- Salt
- pepper from grinder
- 2 tbsp olive oil
- chopped dill sprigs (for garnish)
- chopped lime slice (for garnish)
Instructions

Wash the salmon fillet, pat dry and cut into very thin slices.

Wash, trim, and spin the arugula dry. Whisk lime juice with mustard, salt, pepper, and olive oil.

Arrange arugula and salmon slices on plates, drizzle with the dressing, sprinkle with pepper, and let rest for about 10 minutes. Then scatter dill sprigs and garnish with lime slices before serving.
