Salmon with Lemon Herb Filling

Ingredients
- 2 kg salmon fillet (2 fillets; skin on)
- 2 Organic lemons
- 1 bunch herbs of choice (e.g., parsley, dill, basil, tarragon)
- Sea salt
- Pepper
- 1 tbsp Olive Oil
Instructions

Rinse the salmon under cold water and pat dry.

Wash the lemons hot, pat dry, and slice thinly.

Wash the herbs, shake dry, chop, and mix with 1 tbsp sea salt and pepper.

Place one salmon fillet skin side down on a work surface. Arrange lemon slices over it, sprinkle with herb mixture, and place the second fillet skin side up on top.

Slightly press the fish together and bind with kitchen twine in several pieces. Lightly season the outside with salt.

Brush a large piece of foil with oil. Wrap the fish tightly in the foil and seal as close as possible. Bake on a cold oven rack in a preheated oven at 175 °C (160 °C fan; gas: level 2–3) for about 60 minutes.
