Ingredients
- 1 ripe Mango
- 6 tomatoes
- 1 Shallot
- 1 Garlic clove
- 2 tbsp Vegetable oil
- 1 tbsp Apple cider vinegar
- 1 tbsp honey
- Salt
- Cayenne pepper
- 4 salmon fillets (about 180g each)
- oil for greasing the grill rack

Peel the mango, remove the flesh from the pit and cut into pieces. Blanch the tomatoes, shock in cold water, peel, quarter, core and dice them as well. Peel the shallot and garlic, finely dice and sauté in hot oil until translucent. Stir in the tomatoes, mango, vinegar and honey, then simmer gently for about 10 minutes until slightly thickened. Blend finely and let cool a bit.

Rinse the salmon, pat dry and brush with the sauce. Grill on oiled rack, turning occasionally, for about 8 minutes. Brush with more sauce during grilling and serve the remaining sauce on the side.
