Salmon with Dill Sauce

Ingredients
- 250 g wild salmon fillet (4 fillets)
- 2 tbsp butter
- 2 tbsp sunflower oil
- 1 tbsp Lemon Juice
- Salt
- Pepper
- 100 ml White wine
- 1.5 bunch dill
- 200 g Cream cheese
- 400 ml fish stock
- 200 g Sour Cream
- Salt
- Pepper
- lemon juice (to taste)
- dill (for garnish)
- 4 lemon slices

Drizzle the salmon fillets with lemon juice, lightly salt and let rest for about 5-10 minutes.

Meanwhile wash the dill, shake dry and tear into small pieces. Heat the white wine in a saucepan, add the dill, dissolve the cream cheese while stirring, then pour in the fish stock; simmer everything for about 5-10 minutes. Blend the sauce, stir in sour cream and season with salt, pepper and lemon juice, keep warm on low heat.

Pat the salmon dry, heat butter and oil in a grill pan and grill the salmon over medium heat slowly from both sides (about 3-4 minutes per side). Distribute the sauce onto four pre-warmed plates, arrange the salmon on top, garnish with dill and a lemon slice, and serve. Pair with potatoes or rice.
