Ingredients
- 600 g Salmon fillet (4 Salmon fillets)
- 4 tbsp Lemon juice
- 3 bell peppers (red, yellow, green)
- 1 vegetable onion
- 1 Garlic clove
- Salt
- Pepper
- 2 tbsp olive oil
- 100 ml Vegetable broth
Instructions

Rinse salmon fillets under cold water and pat dry. Drizzle with 2 tbsp lemon juice and let sit for 10 minutes.

Wash, trim, and slice bell peppers into thin strips. Peel, halve, and slice onion into strips. Halve garlic and rub a baking dish with it.

Season pepper and onion strips with salt and pepper, spread in the dish, and drizzle with 1 tbsp oil.

Season salmon fillets with salt and pepper, place on top of pepper strips. Drizzle with remaining oil, pour in broth, and bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for 25–30 minutes.
