Veal Steak with Port Wine Sauce

Ingredients
- 300 g shallots
- 1 EL Butter
- 200 ml port wine
- 125 ml meat broth
- 1 TL fresh chopped thyme
- 0.5 TL liquid honey
- 4 veal back steaks (ready to cook, with fat cap, 200 g each)
- Salt
- Pepper (freshly ground)
- 2 EL olive oil
Instructions

Preheat the oven to 120°C (250°F) on both top and bottom heat.

Wash the meat, pat dry, season with salt and pepper, then sear it in a hot pan with oil all around until browned.

Remove the meat from the pan and cook in the preheated oven for 25-30 minutes until pink inside.

Peel the shallots, finely chop them, melt butter in the pan, and sauté the shallots until translucent. Deglaze with port wine and meat broth, simmer for about 15 minutes. Add thyme, season with salt and pepper. Take the meat out of the oven, let it rest briefly, slice into rounds, and serve with the port wine sauce. Garnish with thyme and serve.
