Ingredients

  • 500 g small savoy cabbage (1 small savoy cabbage)
  • 2 shallots
  • 1 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp paprika powder (sweet)
  • 50 ml Vegetable broth
  • 4 rump steaks (about 200 g each)
  • 2 tbsp plant oil
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp chives

Instructions

    Preheat the grill.

    Remove the outer leaves from the savoy cabbage, then cut lengthwise into quarters, remove the core and slice crosswise into thin strips.

    Peel the shallots, cut into rings and sauté with the cabbage in hot butter. Season with salt, pepper and paprika powder, deglaze with broth. Steam for 7-10 minutes until the liquid has evaporated.

    Score the fat edge of each steak at 1 cm intervals, brush with oil, season with salt and pepper. Grill each side on the hot grill for 3-5 minutes depending on preference.

    Arrange the steaks over the savoy cabbage, garnish with chives and serve with the fruit‑chive salad.
