Avocado Pepper Salad

Ingredients
- 3 yellow bell peppers
- 2 red onions
- 2 ripe avocados
- juice of 1 lemon
- Salt
- Pepper (freshly ground)
- 2 tsp Liquid Honey
- 4 tbsp olive oil
- 2 tbsp capers (from jar)
- oil for frying
- basil for garnish
Instructions

Halve the peppers, remove seeds and place cut sides down on a baking sheet. Roast in the oven at highest setting for about 5 minutes until skins start to blacken. Remove peppers, cover with a damp kitchen towel, peel, and cut into strips. Keep peeled peppers covered and cool.

Peel onions and slice into rings. Peel avocados, remove pits, and cut into thin slices. Drizzle with a little lemon juice. Arrange peppers, onions, and avocado slices on a large plate. Season remaining lemon juice with salt, pepper, and honey; whisk in oil, then pour dressing over the salad. Drain capers and fry them in hot oil for 1 minute. Drain and sprinkle over the Avocado-Pepper Salad. Serve garnished with basil.
