Salmon with Apple

Fresh salmon fillet paired with crisp apple slices in a bright, refreshing salad. Try this and other recipes from Spoonsparrow!

Ingredients

  • 300 g fresh salmon fillet (skinless)
  • 10 g fresh ginger
  • 2 untreated limes
  • 1 dried chili pepper
  • 0.5 tsp black peppercorns
  • 4 tbsp plant oil
  • 3 apples (e.g., Granny Smith)
  • Salt
  • 8 radicchio leaves
  • 4 baby spinach leaves
  • 1 Carrot

Instructions

    Wash the fish, pat dry and place in a shallow bowl. Peel and finely grate the ginger. Wash limes hot, dry them and grate the zest of one half; juice all limes. Crush the chili with peppercorns in a mortar. Mix 2 tbsp oil, ginger and about 6 tbsp lime juice. Spread this mixture on both sides of the fish, cover and refrigerate for at least 2 hours.

    Meanwhile wash apples, remove cores and finely grate the flesh. Combine with remaining lime juice.

    To serve arrange apple ribbons into small towers on plates and drizzle with leftover oil. Slice salmon fillets thinly with a very sharp knife, lightly salt and place over the apples. Garnish with two radicchio leaves and spinach as desired. Slice carrot lengthwise into fine strips and cut out small deer shapes for decoration. Serve decorated.
