Niçoise Salad

Ingredients

  • 250 g green beans
  • Salt
  • 300 g cocktail tomatoes
  • 2 hard-boiled eggs
  • 300 g small boiled new potatoes
  • 1 can tuna (in natural water)
  • 4 anchovy fillets (in oil)
  • 100 g feta cheese
  • 50 g black olives
  • 2 minced garlic cloves
  • 1 lemon (juice)
  • Salt
  • Pepper (freshly ground)
  • 6 tbsp Olive oil

Instructions

    Wash the beans, trim ends and blanch in plenty of salted water for about 10 minutes, then cool under cold running water and drain well. Wash the tomatoes, pat dry and halve them. Peel the eggs and also halve them. Cut the potatoes into halves or quarters. Cube the feta. Drain the tuna and flake it. Pat the anchovies dry. Combine all ingredients except the eggs in a large bowl.

    Sauté the garlic in 2 tbsp olive oil, let cool. Mix remaining ingredients for the vinaigrette and add the garlic and oil. Toss with the salad ingredients and season with salt and pepper. Plate the salad, top with the eggs, and serve.
