Ingredients
- 1 chicken breast fillet
- 200 g mixed leafy greens of choice (e.g., spinach, arugula)
- 2 Tomatoes
- 1 red bell pepper
- 100 g feta cheese
- 1 tbsp mixed fresh herbs chopped (parsley, thyme, rosemary)
- 3 tbsp oil
- 2 tbsp white wine vinegar
- Salt
- pepper (coarsely ground)
Instructions

Wash the chicken breast, pat dry and lightly flatten with a mallet. Season both sides with pepper and salt, then sear in 1 tbsp of not-too-hot oil per side for about 4 minutes until golden brown. Remove and let rest covered with foil.

Wash, rinse, and arrange leafy greens on plates. Wash tomatoes, remove stems, slice, and arrange around the greens. Wash bell pepper, halve, seed, cut into strips, and add to the salad.

Drizzle vinegar and oil over the salad, sprinkle a little salt, and top with sliced chicken breast.

Crush feta cheese with a fork and mix in chopped herbs. Sprinkle over the salad and serve.
