Ingredients
- 3 spring onions
- 300 g cocktail tomatoes
- 500 g smoked trout fillet
- 150 g lightly salted potato chips
- 50 ml Vegetable broth
- 2 tbsp canned passata
- 6 tbsp white balsamic vinegar
- 4 tbsp olive oil
- 2 tbsp crème fraîche
- Salt
- ground pepper

Clean, wash and slice the spring onions into thin rings. Cut the trout fillets into bite‑sized pieces. Wash the cocktail tomatoes, pat dry and quarter them. Mix the chips with the trout cubes and tomato wedges, then divide among four bowls. Combine all ingredients for the salad dressing, blend until smooth, season with salt and pepper, drizzle over the salads, and sprinkle with spring onions before serving.
