Spicy Pasta Salad with Tomato, Capers and Arugula

A spicy pasta salad with tomato, capers and arugula is a perfect after-work recipe from Spoonsparrow!

Ingredients

  • 400 g whole wheat pasta (e.g., tortiglioni)
  • Salt
  • 4 tbsp white balsamic vinegar
  • 2 tbsp Tomato paste
  • 1 tsp pesto rosso
  • Pepper
  • 600 g ripe tomatoes
  • 75 g arugula
  • 20 g capers
  • 50 g grated Parmesan

Instructions

    Cook the pasta in plenty of salted water until al dente. Drain and let it cool.

    Whisk together the balsamic vinegar, tomato paste, pesto rosso and a pinch of pepper in a bowl; mix with the cold pasta.

    Meanwhile wash, core and dice the tomatoes. Wash, rinse and dry the arugula. Add the tomatoes, arugula and capers to the pasta, toss briefly and season with salt and pepper.

    Serve on plates sprinkled with Parmesan.
