Ingredients
- 8 melon slices (honeydew)
- black pepper (freshly ground)
- 2 tbsp chopped dill
- 2 tbsp olive oil
- 2 tbsp grated horseradish
- 2 tbsp whipped cream
- 200 g fresh salmon fillet (thinly sliced)
- juice of one lemon
- Salt
- white pepper (freshly ground)
Instructions

Cut melon slices (without skin) into small pieces. Toss in a bowl with dill and olive oil. Mix the whipped cream and horseradish together.

Arrange salmon on two plates, season with salt and white pepper, then drizzle with lemon juice. Let rest for 10 minutes. Serve the salmon carpaccio with the melon salad and horseradish cream.
