Salmon Tartare Bites

Ingredients
- 300 g salmon fillet (skinless)
- 2 shallots
- 2 tsp grated horseradish (jarred)
- 1 untreated lime (zest and 1 tbsp juice)
- Salt
- pepper (ground)
- 20 g pine nuts
- 1 bunch dill
- 20 g freshly grated Parmesan
- 3 tsp olive oil
- lettuce leaves
- 16 pumpernickel crackers (10 g each)
Instructions

Cut salmon fillet into very fine cubes.

Peel shallots and dice finely. Mix salmon, shallot, horseradish, lime zest and juice. Season with salt and pepper, cover and let rest 30 min. Toast pine nuts in a dry pan, remove and cool. Wash dill, shake dry and chop small. Blend parmesan, pine nuts and olive oil in a mixer. Fold in dill and season with salt and pepper.

Wash lettuce, clean, shake dry and tear into pieces. Top the crackers with lettuce. Arrange salmon tartare on top and drizzle with dill pesto.
