Salmon Stramezzini with Tzatziki

Ingredients
- 1 cucumber
- Salt
- 1 Garlic clove
- 300 g yogurt
- 2 tbsp freshly chopped basil
- 1 tbsp Lemon Juice
- pepper (ground)
- 4 slices sandwich bread
- 150 g cream cheese
- 1 tsp horseradish (jarred)
- 100 g smoked salmon (sliced)

For the tzatziki, peel the cucumber and use a vegetable peeler to cut four long strips. Then halve the cucumber lengthwise, remove seeds with a spoon, grate it, sprinkle with a little salt and let it sit for about 15 minutes to draw out water. Peel and finely chop the garlic. Whisk the yogurt with the garlic, basil, and lemon juice until smooth. Squeeze the cucumber strands, fold in, season with salt and pepper.

For the sandwiches, toast the bread slices lightly. Mix cream cheese with horseradish and spread on the toasted bread. Place half of the salmon slices on one side and top with another slice of bread. Cut diagonally and wrap each sandwich with a cucumber strip. Secure with toothpicks and serve with tzatziki.
