Chicken Toasted Bread Sandwich

Ingredients

  • 2 tbsp crème double
  • 1 tsp mild curry powder
  • 1 tsp lemon juice
  • Salt
  • a pinch cayenne pepper
  • 1 Spring onion
  • 1 tbsp sour cream
  • 100 g chicken breast fillet or turkey schnitzel
  • 1 tsp butter
  • a pinch ginger powder
  • 100 g ripe mango
  • 1 lettuce leaf
  • 2 whole grain rolls

Instructions

    Whisk the crème double with curry powder and lemon juice, season with salt and pepper. For the onion cream, trim and wash the spring onion; slice only the white and light green parts finely and mix with sour cream, seasoning with salt and pepper.

    Cut the meat across into halves. Heat butter in a non-stick pan. Sear the chicken pieces 2‑3 minutes each side, seasoning with salt and ginger.

    Peel the mango and cut the flesh into thin slices away from the stone. Wash and dry the lettuce leaves. Slice the rolls horizontally and toast until golden brown.

    Spread the curry cream on the lower roll halves, top with lettuce, spread onion cream over the lettuce, add the chicken pieces, place mango slices on top of the meat, then cover with the upper roll halves and serve immediately.
