Ingredients

  • 4 salmon steaks
  • 2 tbsp lemon juice
  • 2 tbsp oil
  • 800 g vegetable croquettes (frozen ready-made product)
  • 1 packet light herb sauce (ready-made)
  • 600 g mixed vegetables (e.g., broccoli, spring onions, carrots, kohlrabi, sugar snap peas)
  • Salt
  • pepper (ground)
  • 3 tbsp butter

Instructions

    Season salmon steaks with salt and pepper and drizzle with lemon juice.

    Wash, trim, peel if necessary, and cut vegetables into bite-sized pieces. Blanch each type separately in boiling salted water until al dente, shock in ice water, then drain.

    Prepare the herb sauce according to package instructions.

    Pan‑fry vegetable croquettes in half the butter until golden brown as per package directions; keep warm.

    Add remaining hot butter to vegetables, heat through, and season with salt and pepper.

    Grill salmon steaks on a hot grill or pan for about 3 minutes per side. Plate on herb sauce and top with croquettes and vegetables.
