Salmon Spinach Pie

Ingredients
- 250 g flour
- 125 g cold butter
- a pinch of salt
- 1 egg
- 500 g fresh spinach
- 300 g smoked salmon
- 1 onion
- 1 tbsp oil
- 250 g mascarpone
- 4 eggs
- Salt
- Pepper
- 1 egg yolk (for brushing)
- 2 tbsp whipped cream

Preheat the oven to 200°C.

Sift the flour onto a work surface, mix in salt and create a well in the center. Cut the cold butter into small pieces and distribute around the well, add the egg to the center, and use a knife to cut through all ingredients until small dough crumbs form; quickly knead with hands into dough, shape into a ball, wrap in cling film and chill for about 1 hour.

Roll out the dough thinly and line a tart pan with it, trim excess edges and knead remaining dough together. Wrap in foil.

Prick the dough several times with a fork, cover with parchment paper and place peas or other legumes on top. Blind bake in the oven for about 20 minutes, then remove from oven and take out the legumes.

Roll out the remaining dough thinly and cut into strips using a pastry wheel.

Wash, dry and tear the spinach into small pieces. Slice the smoked salmon into strips. Peel the onion and dice finely. Heat oil in a pan and sauté onions with spinach until wilted. Whisk mascarpone with eggs, season with salt and pepper, mix into the spinach mixture, fold in salmon, and spread onto the pre-baked dough. Top with pastry strips. Beat egg yolk with whipped cream and brush over pastry strips. Bake in the preheated oven for about 40 minutes; cover with foil if needed. Remove from oven and serve hot or cold.
