Ingredients

  • 800 g lamb rack (ready to cook)
  • 3 tbsp sunflower oil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp liquid honey
  • 3 tbsp chopped pistachios
  • 1 Pomegranate (seeds)

Instructions

    Preheat the oven to 160°C with fan and top heat.

    Wash the lamb rack, pat dry, sear all sides in hot oil in a roasting pan, season with salt and pepper, then roast in the preheated oven for about 15 minutes. Remove the meat, brush with honey, sprinkle pistachios on top, press lightly, and continue roasting at 220°C for another 5-10 minutes until gratinated.

    Take the finished lamb rack from the oven, cover with foil, and let rest briefly. Slice between the ribs and arrange with pomegranate seeds. Serve with roasted potatoes if desired.
