Lemon Salmon Fillet

Ingredients

  • 400 g salmon fillet (with skin)
  • 1 tsp sea salt
  • 2 Organic lemons
  • 0.5 bunch Parsley
  • 0.5 bunch Basil
  • 1 bunch dill
  • 10 g ginger (1 piece)
  • 1 small onion
  • 1 Garlic clove
  • 5 tbsp olive oil
  • Pepper

Instructions

    Rinse the salmon under cold water, pat dry and lightly season with salt. Wash the lemons hot, pat dry, zest the peel into strips, squeeze out the juice.

    Wash herbs, shake dry and chop leaves. Peel ginger, onion and garlic and dice finely. Mix lemon juice and zest with 5 tbsp oil, herbs, onion, garlic and ginger and season with pepper.

    Oil a baking dish and place the fish skin-side down. Spread the herb mixture evenly over the fish and sprinkle with remaining salt. Bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for about 15 minutes.
