Ingredients

  • 1 large avocado
  • 1 lemon (freshly squeezed juice)
  • Tabasco
  • Salt
  • pepper (ground)
  • spinach
  • Watercress
  • 1 large red onion (a few rings)
  • 2 hamburger buns
  • 250 g salmon fillet (thick)
  • butter
  • Salt
  • pepper (ground)

Instructions

    Halve the avocado, remove the pit and scoop out the flesh with a spoon.

    Mash or puree the avocado flesh, lemon juice, a pinch of salt, pepper, and a few dashes of Tabasco with a fork until smooth.

    Wash and dry spinach and watercress.

  4. 4.

    Season salmon with salt and pepper and sear in hot butter for about 2–3 minutes per side, then cut into four equal portions.

    Toast the buns to taste, then slice them open.

    Spread roughly half of the avocado cream on the bottom bun halves, top with spinach and watercress leaves, add salmon slices and onion rings, spoon remaining avocado cream over the top. Place the upper bun halves and serve.
