Fried Asparagus with Ham

- Pepper (freshly ground)
- 1 kg asparagus
- 300 g cooked ham (thin slices, without fat edge)
- 5 tbsp flour
- 100 g breadcrumbs
- oil (for frying)

- 3 tbsp mayonnaise
- 150 g yogurt
- 4 tbsp crème fraîche
- 1 tbsp mustard
- 1 tbsp pimpinella
- 1 tbsp sorrel
- 1 tbsp watercress
- 1 Tbsp parsley
- 1 tbsp borage
- 1 tbsp chervil
- 1 tbsp chives
- 3 tbsp Lemon juice

Whisk the two eggs in a deep dish and season with salt and pepper. Place flour and breadcrumbs on separate shallow plates.

Peel the asparagus, trim ends, and boil for about 18 minutes until firm yet tender. Drain, cool slightly, then wrap each spear in a ham slice; first dredge in flour, then beaten egg, then breadcrumbs.

Heat plenty of oil in a large pan and fry the spears in batches for about 4 minutes per side until golden brown.

Peel the boiled eggs and finely chop them.

Combine mayonnaise, yogurt, crème fraîche, and mustard; fold in herbs and chopped eggs, season with lemon juice, salt, and pepper. Taste and adjust seasoning. Arrange the asparagus spears on a plate and serve with the herb sauce.
